Homemade Kettle Corn

I love kettle corn but never tried it at home because I figured it was hard to make. Was I wrong. No more waiting for farmer's markets or county fairs -- in about 5 minutes, you'll have the perfect snack for your next backyard movie night. And we have the perfect retro red and white popcorn boxes, 80s style popcorn bags or kraft paper food trays in the shop to serve it in.



Ingredients

1/2 cup popcorn
1/4 cup vegetable oil
1/2 cup sugar
1 tsp salt

1. Once the vegetable oil is hot, add the popcorn and sugar. Swirl to coat popcorn kernels. Cover the pot and shake it every couple of seconds once the popcorn starts popping.

2. As soon as the popping slows down (about 3 minutes), remove the pan from the heat and empty the popcorn into a large bowl. Sprinkle with salt and toss.

Very important tip: remove the popcorn from the heat as soon as the popping slows down. Don't wait until every last kernel has popped. I did that the first time and ended up with a pot covered in burnt sugar.  

If you somehow have any extra, it should keep in a closed container for a few days.
